I'm Addison Lambert
Hi! My name is Addison Lambert and this is me on my first trip to Chicago throwing my first temper tantrum. My Dad took me straight for the sugar of the famous Michigan avenue popcorn shop to keep me from becoming an even bigger monster! I have loved caramel popcorn since and have had some shipped to Des Moines it seemed like every week. That all changed when my Dad said "You know it would be a lot cheaper if you made your own and people might want to buy it too". I asked him if that was possible and he said "Easier than making smoked meats!" He started Lambert & Ewers Smoked Meats a long time ago. And after a little research, hammering and sawing, here I am talking to you to introduce myself, my store and my caramel corn!

How It's made
First of all I need to say I never knew how much math was involved in making food! We weigh everything and our recipe is in weights! It's a big difference than just using a measuring spoon. WE start by using mushroom popcorn. Bigger popcorn! We went to the farm where it is grown. That was very cool. Once the popcorn is popped I have to shake it on a sorter so the old maids fall through and are sorted out. Then I add the popcorn to the mixing bucket. In another container I carefully measure the ingredients for the caramel, heat to the exact temperature and then mix it into the popcorn. It then is left to cool, weighed, put into it's final container, boxed and then some we take to UPS. My Dad helps me delver the local Des Moines orders.
